We choose not to add any sulfites, sorbates, or preservatives, but to pasteurize our product instead, assuring that only natural products go into our bottle and thus in your glass.
We choose our blend of different apple varieties individually for each batch of cider based on what will compliment our target end product, sweeter apple flavors for Cherry, brighter flavors for Pomegranate, tart flavors for the dry, and balanced flavors for the Apple.
We choose to wait till each apple variety is at its peak flavor ripeness, holding our apples in cold storage until the entire blend is ready to be pressed, created added complexity and balance throughout our processing and fermentation.
